Hello all, the vast majority of this info is from http://www.xbox.com/en-US/live/transfer/default.htm I am simply posting a walkthrough here for those that are curious.
You have two options for moving data from your previous hard drive, to the New Xbox 360.
1. Transfer via USB- Fast and perfect for small profiles with limited DLC
2. Transfer via Xbox 360 Hard Drive Transfer Kit � Takes a little longer but will allow you to transfer any amount of data.
For transfer using USB simply save up to 16gb of your profile/content, to an approved USB storage device on your old console. Plug said storage device into your new 360S and you are good to go.

For transfer via Xbox 360 Hard Drive Transfer Kit it�s a little more involved;
Step 1 � Turn off your old console and disconnect the hard drive.
Step 2 - Using your Xbox 360 Hard Drive Transfer Kit, connect your old 360�s hard drive to the non USB end of the cable, then connect the USB end to the New Xbox 360.
Step 3 � After powering on the New Xbox 360, a message will pop up asking if you want to transfer to, or from console. You want to select �Yes, transfer to console�, after selecting that, just hit �Start� on the next screen and your data transfer will begin.
Step 4 � Now that the New Xbox 360 is loaded with your old content, you will want to perform a license transfer here: www.xbox.com/drm after you complete the license transfer you will be ready to go!
